Raspberry Truffles with raspberry on top

You want “something” to eat but don’t quite know what it is?  It’s not chocolate…it’s not red pepper slices…it’s something creamy, decadent, slightly sweet, that melts in your mouth.  Mmmmmmm…. know what I mean?  If you do – this easy recipe is for you!  I bought some organic raspberries this week and decided I had better use them up before they go bad since they are $7.00 for a tiny container!  Raspberries are so yummy and good for you.  Just remember to always buy organic berries as they are top of the dirty dozen list.  The skin on berries is so thin that chemical permeate into the fruit and stay there until you eat them so please buy organic or not at all.  Here’s the really great news – once you feed your family organic, whole food in its natural state, you will no longer want that “something” but not know what it is because your body will have what it needs and tell you exactly what you are missing!  Try it!

How many times have you tried to get your pickiest eater to eat more fruit?  It is a lifelong quest with my middle guy.  He simply does not like fruit and barely eats vegetables so we have to be creative in my household.  This “candy” as we call it fits the bill of one way to sneak a little extra fruit into him.  We’ll call it creative parenting 🙂 .  Oh yeah, did I mention there is only 2 ingredients in this wonderful treat?  It doesn’t get any better than that.

Raspberry Truffles

Delicious, creamy, melt in your mouth truffle

Ingredients

  • 1 cup coconut butter
  • 1 cup organic raspberries

Instructions

  • Combine the coconut butter and the raspberries in your food processor and process until smooth and creamy and mmmmmmm…..sorry I got ahead of myself. That is it! Scoop the mixture out by the tablespoons onto a waxed paper lined plate of baking sheet. I use a cookie scoop to do this. Place in the fridge to firm up – about 30 minutes.

Notes

You can add a little sweetener of your choice if you wish but I find this is sweet enough when you use ripe raspberries. If you are feeling creative you can add a touch of vanilla to the mix for a raspberry cream truffle.
