Lemon White Chocolate Chip Cookies

Tonight the Cookie Monster has reared it’s ugly head in my backyard. It bounced in the trampoline for about half an hour before yelling through the door “Mom! Can you make those lemon cookies pleeaassee?” Well, what’s a Mom to do? So I got up and started making cookies. Not five minutes later the door flew open again “Are they ready yet?” “Not yet”. The bouncing continued. I happily turned on my kitchen aid mixer and got to work. “How much longer ’till they’re done?” Ahhh the joys of ADHD children. I like to think he just loves my cookies so much that he can’t wait but I really know that it’s the ten minutes feeling like ten hours. Kids will be kids and everyone loves a cookie.

These cookies are made with whole wheat and palm sugar. It makes a big batch of 4 dozen cookies. These cookies are lemony with just a hint of richness from white chocolate. When you’re tired of plain old chocolate chip cookies, these cookies hit the spot! It can be tricky to find organic white chocolate so you may have to look around a bit to find it but it can be done!

Lemon White Chocolate Chip Cookies

Ingredients

  • 1 cup butter
  • 3/4 cup palm sugar
  • 2 eggs
  • 2 tsp lemon extract I use Simply Organic brand
  • 21/3 cups white whole wheat flour
  • 1 tsp sea salt
  • 1 tsp baking soda
  • 1 cup organic white chocolate chips or chunks

Instructions

  • Cream together the butter and sugar. Add 2 eggs and the lemon flavouring. Mix until fluffy. In a separate bowl, mix flour, baking soda and salt. Add to the butter mixture and mix until well combined. Fold in the chocolate chips. Drop by tablespoons onto a cookie sheet and bake at 375 degrees F for 10 minutes.
