Nut free chocolate cookie dough balls

I am so fortunate that my boys do not have a nut allergy. I have some serious picky eaters and one lived on peanut butter for at least three years! With Mr. Picky pants it is very challenging to find whole organic foods that I can make and send to school for him to eat without it coming home again. These cookie dough balls are nut free and picky pants approved – of course I make these when he isn’t helping in the kitchen so he doesn’t see what ingredients are used. Once he saw me put something in yogurt and he didn’t eat yogurt again for over a year! Oh the joys of parenting…some things are not in the manual

Nut free chocolate cookie dough balls

Ingredients

  • 1 cup sunflower seeds
  • 10 medjool dates
  • 2 tbsp cocoa powder
  • 1/2 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1 cup oats
  • 3 tbsp water
  • Dark chocolate covered cacao nibs 70% or greater

Instructions

  • Place sunflower seeds and oats in a food processor and pulse on high until a fine grain is created. Add dates, salt, cocoa powder, and vanilla extract to the food processor and pulse until a fine mixture is created. While running, add water one tbsp at a time until mixture comes together. It should stick together when pinched between your fingers but not be wet or too sticky to handle. Roll in the palms of your hands into two bite balls. Press cacao nibs in the outside of the balls (about 6 per ball). Refrigerate to firm up and store in refrigerator. Makes 15 two-bite cookie dough balls.
