Low Carb Bread

Have you tried low carb bread? It is usually terrible! I have searched high and low for great low carb bread and I have found after many tries only two that I would spend the $8.00 per small loaf (yikes!) to purchase. But organic low carb bread? Now that’s hard to find and add the challenge of finding it in Canada and you pretty much have a needle in a haystack scenario going on. So I began a quest to create a low carb bread at home that was easy to make and tasted good. After taking inventory of many recipes, this is my version and I think it is pretty darn good! If you have never eaten low carb bread before you need to know it is chewier than regular bread so make sure your expectations are for low carb bread and not regular bread or you will be disappointed.

Low Carb Bread

Ingredients

  • 1/2 cup warm water not more than 108 degrees F
  • 1 egg
  • 1 tbsp olive oil
  • 2 tbsp erythritol
  • 1/2 tsp sea salt
  • 1/3 cup flax meal
  • 1/4 cup soy flour
  • 2 tbsp oat fibre
  • 3/4 cup vital wheat gluten
  • 1 tsp dry yeast

Instructions

  • Using your bread maker, add ingredients based on manufacturers specifications. I have listed the ingredients here in the order my bread machine takes them. At this point you can do one of two things: you can set your bread maker to low carb setting and let the machine do its thing, or you can set it to dough and finish it in the oven yourself. The choice is yours. I have made this bread both ways and personally prefer the oven finished bread. This is a small loaf so depending on the size of your bread maker pan your results can be a misshapen loaf. It will still taste great but look totally weird! For this reason I prefer finishing in the oven. If finishing in the oven, preheat to 350 degrees F and grease a bread pan. Remove dough from bread machine and shape into a loaf shape. Place in pan, cover and let sit away from any drafts for 30 minutes. Place in oven and bake for 30 minutes. Voila! Yummy low carb bread.
