Lemon is so refreshing. I love the taste and so does my entire team! So in the aftermath of Easter chocolate and the quest for a sugar free treat that refreshed after a big Easter dinner, lemon drops seemed to be the perfect solution. I tried a new product today using creamed coconut by Let’s Do Organic which for anyone who has never used it before, it is the same thing as coconut butter or coconut manna – but at a fraction of the price!
I had picked this up on my last USA excursion at the Whole Foods. I believe you can get this here in Canada as it is Canadian Organic certified but I have never been fortunate enough to find it. These lemon drops are refreshingly creamy with just a hint of pleasant sweetness. The perfect end to a wonderful dinner.
Coconut Lemon Drops
Ingredients
- 1 box creamed coconut I used Let’s Do Organic brand
- 2 tsp organic lemon extract I use Simply Organic brand
- Zest of half a lemon
- 8 drops of organic stevia
Instructions
- Warm the creamed coconut until semi-liquid. Add the lemon extract, the lemon zest, and the stevia drops. Stir well and drop by tablespoons onto a waxed paper lined plate. Place in the refrigerator for 30 minutes or until solid. Remove and enjoy as hey melt in your mouth with lemony goodness!
