Sugar Free Dark Chocolate Peanut Butter Cups

“I want candy…I want candy”

Let’s keep this simple…I want candy but not chemicals. Correction – I want chocolate. I don’t do sugar and I don’t do maltitol ( ask my belly and bowels why – and there is evidence that indicates maltitol does in fact have an effect on blood sugar levels therefore insulin secretion). It is almost impossible to get dark chocolate that is sugar free without any of those ingredients so I have been making my own with dark chocolate and stevia and/or erythritol. I went to the bulk barn today and found some no sugar added chocolate that is sweetened with stevia and erythritol! That is perfect and a huge time saver for me. The result – my new favourite vice…peanut butter cups mmmmmmm good.

3.5 oz sugar free chocolate
2 tbsp organic peanut butter
1 tbsp coconut oil

Either with a double boiler or microwave (no judgements here) melt chocolate and coconut oil together-stir well to combine to a smooth fluid consistency. Place one tsp chocolate in mold. Place half tsp peanut butter on top in centre of chocolate and cover with another tsp chocolate. Continue until all chocolate is used. This made 12 cups for me with chocolate molds.
Place in freezer to firm up for 30 minutes. Remove from molds and store in freezer.

“I got candy…… er chocolate”. I am in my happy place. Look out that name brand sugar filled chemical laden peanut butter cup. We don’t need you anymore.
